Choose Local Farms

When it comes to health, choosing local sources matter.  Some of the best quality, most nutrient dense produce you can find will be from local farms in your area.

Why is nutrient density important?  Fruits and vegetables are living organisms and begin to lose nutrients as soon as they are harvested.  With damaging industrial farming methods, long travel, and lengthy storage times, by the time typical produce reaches the grocery store shelves there is little to no nutritional value left.  This is a big part of why it’s important for your health to find, and connect with the local farmers in your area.

Produce from local sources, like Ecoculture Farms in Temecula, is a good way to ensure that your fruits and veggies are harvested at the peak of ripeness, and are available to you within just a few of days of harvest.  Farming practices are also important factors to consider when deciding who will be growing your food.  Ecoculture Farms is dedicated to consciously producing healthy food in harmony with the environment.   They offer a locally grown CSA (Community Supported Agriculture) produce box which can be delivered to pre-selected pick up locations, or can be picked up at the farm. CSA BOX-Ecoculture Farms, Wine Country Temecula

Recipe- Chef Leah Di Bernardo of EAT, Old Town Temecula

1 bunch carrots peeled (reserve peelings for compost/reserve bit & pieces for stock)
1 tablespoon grass fed butter
1 tablespoon Olive Oil or avocado oil
Pinch sea salt
Honey

Pre-heat oven to 400 degrees
Prepare half baking sheet with parchment paper
Toss peeled carrots in butter, olive oil, a drizzle of honey, and a pinch of salt.  Be sure to coat well.
Place on parchment paper lined baking sheet.
Roast for 4-8 minutes (depends on how hot your home oven runs).
Enjoy immediately, or hold over for salads or soup! *next week, we’ll use them in a salad!
